Adaptation Ale is our rotating small-batch IPA series. Brewed once quarterly, Adaptation gives our brewers a chance to explore the near limitless possibilities of our favorite style of beer. No two batches will be the same. Keep an eye out for new releases every January, May, July and October.

We did 3 variations of Adaptaion this time. We deconstructed the Everything Rhymes with Orange recipe by using the same grain recipe from Everything Rhymes with Orange, but only using one hop. 10.1 is only Simcoe hops, 10.2 is only Citra hops and 10.3 is only Mosaic hops. On top of that all of the whirlpool hops were fresh hops overnighted from the pacific northwest the day they were picked.

We started the show with golden promise, flaked wheat, and oats for balance and a smooth, lingering mouthful. This pineapple bomb is loaded down with Denali, Idaho 7, and Calypso hops. We added a boat load of pineapple puree to bring all of those tropical flavors out in full force for the main event. Everyone's favorite New England yeast strain is the MVP of the show bringing this beer up to 7.9% ABV. You're not going to want to miss this!

The warmer weather on the horizon provided the inspiration behind this round of Adaptation. Featuring Golden Promise and Vienna malts, we added some flaked oats and wheat to make up the perfect color and body. We're highlighting Idaho 7, Calypso, and Simcoe hops for an intense tropical flavor without the addition of any fruit. This IPA is low in bitterness, but strong in punch coming in at around 8% ABV.

This edition of our quarterly rotating IPA series features a juicy blend of Comet, Citra and Mosaic hops along with a dose of Mosaic Lupulin Powder over a a full bodied base of Golden Promise malt and white wheat with a hint of apricot puree.

The first time we brewed with fresh hops was last fall, when we made Adaptation 2, fresh hop Mosaic. One of our most sought-after and talked about beers, it was produced in extremely limited quantity. We decided to re-brew it this year with some small tweaks (like even more dry hops and a smoother mouthfeel) because it was just too good to brew only once.

We crafted a medium sized IPA with a soft mouthfeel derived from flaked wheat and let it mature on a large helping of mango puree. We used one of our favorite hop varities, Comet, exclusively to lend an intense tropical, floral and herbaceous aroma while keeping bitterness in check.

An easy-going, simple malt profile of 2-Row Barley and Flaked Oats and Wheat provides a clean canvas for Southern Hemisphere hop varieties to shine. Rakau, Waimea, Motueka and Galaxy hops are blended to bring out nuanced and complex aromas and flavors of lemon peel, passionfruit, pineapple and wildflowers in contrast to the explosive citrus and pine of their Pacific Northwest counterparts.

We drew inspiration from a handful of our favorite New England IPA's when crafting this beer. Soft pillowy mouthfeel, hazy and non-filtered with juicy citrusy hops and a fluffy white head. This IPA features mid-low bitterness and a full, soft body while still finishing dry and clean like the rest of the Roughtail lineup. Simcoe hops are featured, with Citra and Mosaic providing backup and complexity.

Our fall Adaptation Ale is a fresh hop harvest IPA brewed with wet Mosaic hops that went from the hop bine to the kettle in 24 hours. We brewed a very light American Style IPA as the base to let the Mosaic really shine. 4lbs per barrel of fresh hops, plus additional for dry hopping...this is an all out expression of the Mosaic Hop.

Black IPA features strong pine needle with subtle orange peel and grapefruit flavors and aromas from a heavy dose of Amarillo, Chinook and Centennial hops. Its malt backbone finishes very clean and exceptionally dry.
