Glassware
Kölsch is served in a tall, thin, cylindrical glass called a stange, which holds about 7 ounces of beer. The stange’s shape helps it retain foam, which protects the beer from oxidation.
Serving tray
Köbes carry the stanges on a circular tray called a kranz. A kranz can hold up to 18 stanges.
Marking coasters
Köbes mark a tick on the customer’s coaster each time they are served a full glass.
Signal for “check please”
When a customer is done, they place their coaster on top of their glass.
Atmosphere
